Ingredients1 small box instant Strawberry Cream Jelly Pudding, 1 and 1/2 cups milk, 1/4 cups sugar, 1 cup cool whipped cream + extra for garnish, biscuit of your choice and 2 cups diced
strawberries.
MethodWhisk the instant pudding and the milk together. Then fold in the cool whipped cream. Place a layer of biscuits in a tray and spread a layer of pudding on the biscuits. Cover it with another layer of biscuits and again add a layer of pudding to the next layer of biscuits. Add as many layers as you want and refrigerate.
Heat the diced strawberries and sugar in a pan on a medium flame and bring it to boil. Lower the heat and keep stirring until it gets thick. After it cools down, spread it over the top layer of cake already prepared and again refrigerate. Cut it into slices and add toppings of strawberry and whipped cream.
Custard Cream Cheesecake
Prep Time: 10 minutes plus refrigeration
IngredientsFor the base: 200g crushed custard cream biscuits, 50g caster sugar, 50g melted butter. For the cheesecake: 200ml double cream, 50g caster sugar, 280g cream cheese (room temperature), 250g mascarpone cheese (room temperature), 2 tablespoon custard powder, 4 tablespoon condensed milk.
For decoration: Custard cream biscuits.
PreparationFor the base, mix the crushed biscuits and melted butter together. Pour the mixture in to a greased tin and press it to have a flat base of the cake and then refrigerate.
For the cake, lightly whisk the double cream and caster sugar until the mixture has doubled in volume. In another bowl, whisk the cream cheese, mascarpone cheese, custard powder and condensed milk. Now, slowly fold the whipped cream mixture into the cheese mixture. Take the base out of the refrigerator and place a layer of prepared cheese on it. Place it back in the refrigerator for a minimum of 2 hours. After it is set and chilled, top it with the biscuits crumbs.
Chocolate Biscuit Cake
Prep Time: 30 minutes plus refrigeration
Ingredients800g digestive biscuits, 100g walnuts or hazelnuts, 200g sugar, 60g unsweetened cocoa powder, 240ml water, 150g butter, 1 teaspoon of vanilla extract, 120g whipping cream, 120g chopped chocolate
PreparationRoast the walnuts or hazelnuts for about 5 minutes stirring frequently on a medium-high heat. Mix them with the crushed biscuits in a bowl. In a separate pan, mix sugar and cocoa powder and gradually add water. Then add butter and boil the mixture on a medium heat for about 7-8 minutes stirring frequently. Let it cool for about 10-15 minutes and add vanilla extract. Slowly pour this on the biscuit and walnut mixture and stir them to combine well. Place the combined mixture in a greased cake ware and using the back of a spoon press it to flatten the cake. Refrigerate for about an hour.
Heat the whipping cream just till it boils and then remove from heat and add the chopped chocolates and stir until it is smooth and shining. Pour this on the cake already prepared and again refrigerate for another 3-4 hours. Decorate with roasted walnuts or hazelnuts on top before serving.
