Sindhi Tomato Kadhi


INGREDIENTS

INGREDIENTS:

To start with:
2-3 tbsp Oil (Of your Preference)
11/2 tbsp Gram Flour (Besan)

For Tadka / Tempering:
4-5 Curry Leaves
1/4 tsp Methi Daana
1/4 tsp Jeera
1/4 tsp Asafoetida / Hing
2-3 Green Chillies
1 tsp finely chopped Ginger
1/2 tsp red chilli powder
1/4 tsp turmeric / haldi powder

Main Ingredients:
1/2 kg Tomato Puree
100gms Lady Finger (Bhindi)
100gms Cluster beans (Gavar)
1/2 drumstick
1 tbsp Imli Paani or Kokum
1 tsp Sugar (Jaggery can also be used)
Salt as per taste
Finely chopped fresh coriander leaves for garnishing

METHOD

Heat the kadhai. Add 3tbsp of oil and gramflour. Saute it for a minute and add jeera, methi, hing, ginger, green chillies (sliced long), haldi and red chilli powder. Then add 11/2 cup of room temperature water and bring it to boil. While the water boils add the drumsticks and Gavar. After they boil thoroughly add the Tomato Puree. Let this boil for 5-10 minutes and then add Bhindi. Once the Bhindi gets cooked add 2-3 tsp of imli paani, sugar and salt. Let this boil for a minute. Place the kadhi in a serving bowl and garnish with fresh coriander leaves.

Tangy Sindhi Tomato Kadhi is ready to eat with Steamed Rice.
