Chinese Vegetable Fried Rice

INGREDIENTS

Very easy! A must-have for any Chinese meal

Ingredients:

Rice
Carrots
French beans
Spring onions
Capsicum (optional)
Cabbage (optional)
Mushrooms (optional)
Green chillies
Vinegar
Soya sauce
Other Chinese sauces (optional)
Sugar (optional)
Salt
Oil

METHOD

Pre-soak rice for an hour, drain the water and cook in a pan of boiling water. Add 1 tsp oil to keep the rice grains separate. Also don't overcook the rice and make it mushy, cook it until al-dente (slightly firm).

Then in a wide pan, saute finely chopped garlic and let it become brown. Then add 1/2 cup chopped carrots, 1/4 cup French beans and 1/4 cup spring onions whites (slices mushrooms, chopped capsicum and grated cabbage is optional). You can also add 1/2 tsp sugar since it helps vegetables retain their colour. Don't overcook these vegetables since they will lose their crunchiness.

Make sure the flame is on high before adding the sauces. Now add 1 tbsp vinegar, 1 tsp soya sauce (since soya sauce will make the rice slightly yellow, you can try skipping it if you like rice to be white). In case you are having this rice as a stand alone dish, you can also add other Chinese sauces, but the colour of the rice may change. Since all these sauces have salt, check the taste and then add salt. Once salt is added don't cook for much longer since vegetables will start leaving salt. Your Chinese Vegetable Fried rice is ready.

Garnish with spring onion greens (stalks). Serve with Vegetable Manchurian (recipe in the earlier post) or any Chinese vegetables.

(Tip: Before making it for guests, do a test run with the sauces you would like to use, to check not only taste but also colour! If you don't have any sauces, just vinegar will also do)
