Kabuli Rice

The recipe is a Rajasthani dish with a twist, my mum-in-laws creation. She was originally from jodhpur. Rich in flavors and color. Rajasthan is known world over for its delicious, spicy food, hard to resist. Hope you enjoy!


INGREDIENTS:
250g - kand ( purple yam)( rataalu)
2 small sized potatoes ( cut in rounds)
2 small onions( cut long)
2 small tomatoes ( in rings)
1/2 kg curds
3-4 slices bread( cut in squares)
1 bowlful coriander( finely washed and finely chopped)
2tbsp ghee
Spices- red chilli powder, turmeric, coroander powder, salt, garam masala( optional)
1 1/2 tbsp of garlic & chilli, ground together.

  METHOD
The maximum time is used in prepping.
The ' kand ' needs to b peeled, cut in flat rounds and submerge in water( to prevent it from getting darker)
Tip : oil ur hands before working on this (as its sticky)
Peel the potatoes and cut in flat rounds
Cut the onions long
Breads in squares
All these will need deep frying in ghee till they turn red- brown.( starting with kand , takes the longest)
Fry them individually.
It takes almost 8-12 mnts to fry each

For the gravy:
Add the four spices to the curd and mix well with a spoon to avoid lumps.
Use the ghee left over after the frying for making the gravy.
Add the chilli garlic paste to the ghee( which is already hot)
Then add the curd mix
Keep stirring or it may curdle.
Chk for salt( use it according to ur preference)
Let it cook for 4-5 mnts.
Then add the fried veggies to this gravy.
And finely chopped coriander and tomatoes.
Cook for some more time.
U r set with your gravy mix.
On the side, cook 1 1/2 katoris of basmati rice, full grain.
Cook it and keep it aside.

Plating:
Take a deep baking dish/ bowl.
Put the first layer of cooked basmati rice at the bottom of the bowl.
Then add your cooked gravy( with the vegetables), spread it well all over the rice.
Then add a second layer of cooked basmati rice.
Garnish with fried onions, a line of sliced tomatoes and coriander.

Ur kabulis ready to eat and enjoy!
