Carrot, Sweet Potato and Chickpea Soup
olive oil in a large saucepan over medium-high heat. Add one roughly chopped
large onion and 2 crushed cloves of garlic. Cook and keep stirring for 3
minutes. Add coriander (dhaniya), cumin (jeera) and chilli powder to it. Quantity
should be 1 teaspoon of ground coriander powder, 2 teaspoons of ground cumin
powder and 1/4 teaspoon chilli powder. Continue stirring for 1 minute. Add the
sweet potato and carrot. Quantity for adding is 600grams of peeled and diced
sweet potato and 500 grams of peeled and sliced carrots. Let it cook, stirring
often, for 5 minutes. Add six cups of chicken stock which is low in salt. Vegetarians
can replace chicken stock with vegetable stock.

and simmer, stirring occasionally, for 20 minutes. Add the chickpeas to the soup
and let it simmer, covered, for 10 minutes or until the chickpeas are tender. The next step is to take out your blender and

gravy. Pour it back into the saucepan over medium-low heat. For seasoning, add
salt and pepper. Squeeze 1 tablespoon lemon juice and add. Heat, stirring,
until hot (do not boil). Pour into bowls. Top with croutons. Again sprinkle
