hi melanie,
great to know that you are trying things now and are not that disappointed. whta i do for my daughter for chicken is...get the breast pieces or any, marinate them in salt pepper, alittle ginger and garlic and lime, for abt 3 hrs and then saute the chicken pices (cut them in cubes). they cook so fast and taste good. we can't give the ready to eat frozen chickens b'coz as you must be knowing they contain soy protein. but sometimes my dauhgter tolerates it, if i'm lucky!!
what kind of reaction does your son get after eating the allergent foods? my daughter gets aggrevated eczema and itches. with milk she has itching, runny nose , sneezing. and with eggs its vommiting, so by chnace if she eats mayo from my burger...i had it. she surely throws up!!
my daughter is allergic to carrots, onions, potaoes too.

what i do for a meal is...rice with veggies and chicken. (b'coz my kid loves non-veg foods). and in the night pasta with sausage, etc. so this gives a change for teh child too.
i tried asking for some reciepes with rice milk but they said rice milk is a substitut for skim milk and will not thicken, so can't be used to make sauces.
have you tried the rice milk ICE_CREAMS? my daughter is not fond of sweet foods, sot hats out for me....but you can try for your son.
keep writing
bye for now

hi melaine,
my daughter has almost the same list of food allergies. see, they can't tolerate soy or milk...so try Rice-milffrom the Imagine Food grp.. you will get it in the health stores or may try asking in your local grocery store. they come fortified and in 3 flavors...vanila, original, strawberry and choco too. its not the best tasting but we have to try.
does your son eat pasta? we can't use the regular pasta sauces as in has the romano cheese, so i have tried quiet a few pasta sauces from the health stores like tomato & basil, or which have the label 'no dairy'.
in the freezer section you may get egg-free and dairy-free waffles. they are just wheat waffles and tase very close to the original ones. make small oiecse and let you r son nibble on them.
try fortified crackers and breads with calcium.
as for Butter, try the ones made with corn oil or olive oil. they are actually not buuters but margarine and tatse evry good. we have switched to it, the whole family.
for breaksats there are many fortified cereals like rice crispies and wheaties, etc.
i give my daughter a vitamin supplement and also 500mg of calcium. (tums calcium). so that she keeps up with the minerals vit and cal. she needs to grow.
i have a few websites that i can mail you, where there are many mothers in the same boat sot hat you won't feel so depperssed. i was in the same situation and had paniced terribly ...didn't know what to give her and what she can eat. there is plenty out there, just be careful and check the labels.

let me know what happens and whether you tried any of the above things.
bye for now

hi melanie,
don't worry...they say such kids get over their allergies by the age of 8-10, so i'm hoping things will change for us.
i stay in the USA, but we can be a support for eachother. share recipes and stuff like that. there are special web-sites where i've talked to several mothers and come to reconcile and not worry.
i know its difficult for us to make foods without dairy. my daughter loves cheese and cries for it but i feel so sad taking it away from her. she reaches the refridgerator's dairy sec and pulls out the cheese. !!
my daughter doesn't even like rice milk, tried it cold with ice, ect but she says 'no' to it.
but the only plus is she loves pasta. they are fortified with b-complex and iron.
also...as your son can't tolerate lentils, chicken is a good source of protein for him. may be bottled baby food receipes.(for meat).
do you get all the other foods i wrote to you abt...margarine ,crackers etc.
anyways, i'll catch up with you evryday, so keep posted and do tell me abt new receipes too. what dairy free receipes are you looking for...like with what pasta or rice or veg?
let me knwo
