Strawberry Fruit Custard

  INGREDIENTS

A quick, easy and refreshing dessert, a delight for fruit lovers!

Ingredients:

Custard powder
Milk (for vegan option, you can use non-dairy milk)
Bananas
Apples
Pomegranate
Sugar

  METHOD

In 1/4 cup of room temperature or warm milk, add 3 tbsp custard powder and mix it well so that there are no lumps. (Avoid hot milk since it could sometimes curdle the milk)

Then in a pan, heat 2 1/2 cups of milk and let it come to a gentle boil. Then lower the flame add 4-5 tbsp of sugar and mix. Then add 2 tbsp of custard mix and whisk. Keep adding a little a little at a time, while continuously whisking. Cook for a few minutes on the gas until the custard thickening. Remove from gas and cover it (to prevent a layer from forming) and let it cool. Whisk it well to ensure custard is smooth. Then chill it in the refrigerator.

Meanwhile chill fruits but do not cut them yet since they can turn black. You can ofcourse peel pomegranate and keep ready.

Once chilled, transfer custard to a serving bowl and add fresh fruits. (Do not add fruits before the custard is sets, else fruits will release water in the custard and make it watery). Remember that you should add fruits such that Every bite is filled with fruits!

You can either refrigerate for 1-2 hours after adding fresh fruits for the flavours to soak in, or you can directly serve the custard.

Garnish with pomegranate and serve it chilled.

Enjoy!

(Tip: Can be made vegan using non-dairy milk like almond milk. You can also add grapes, berries and mangoes. Avoid pineapple and other citric fruits.

Nuts like almonds and cashews can give it a nice crunchy feel. You can also add chocolate chips, tutti-fruity, cardamom (elaichi) powder or rose water.

Measurement wise, 1 litre of milk can serve 10 people.
