Aarti, thanks. i am not that good in cooking & i am working for 9 hours, so i need easy recipes. but i will try to make wheat dosa on weekends.
I am in US so i think i can give it a try to keep my batter for a week.
i have some doubts.you use that batter for a week ? it'll get stale ? is it safe that many days.and for babies is it safe to give that old batter ?
btw, what is your baby name ?
Hetal, thanks alot for clarifications. i am not good in cooking & i was looking for a good convincing reply. i have been struggling to make a good idli dosa batter and everytime my mil wins the race.its frustrating to hear from her a long lecture after working like a dog for 8-9hours.
i am buying your vote & expecting it to succeed.i will try the fermentation steps like you mentioned with my present recipe.i'll let you know.
But it would be very kind of you, if you could plz give me recipe of how you make. i think that will be easier for me to use fenugreek seeds in it rather than editing my own recipe.
the fermentation i get is not much.i will check on things you mentioned.
Thanks alot for the details. are you south indian by any chance ? your name is not a south indian name :)
i am really impressed by the level of your knowledge & prefect clearcut answers for every smallest thing or product and its usage.there is alot i have learnt eversince i started reading your post. you have made this site meaningful for me.hats off.
lots of love to nirja,

i have soaked the mixture today with methi seeds, so updating you that i am trying :) i sincerely hope i get the things done rightly.
thanks for your support. please always be there for me, and bear with me, atleast, until i succeed in my recipe :)

Hetal replied. thanks for all nice words..it just made me feel abit uncomfortable..
i was born gujarati, but now south indian after marriage :)) so i follow my mother in laws recipes which is obvious, i dont rem them that nicely..even though i make them often,,its not my piece of work so i tend to forget it.
but i want you to try on your own mix or batter, because i dont believe in spoon feeding :) add in water mix of dal or rice you have been doing, sprinkle some methi seeds in it randomly..just a lil dash in the whole family batch,,and let it soak with the mixture or with urad dal.
i know you are good in cooking, otherwise how do you know that rice flour makes dosa chewy. it didnt strike me until i read aarti post.but it striked you, so i guess you do know cooking !
and about mil issues and inlaws matter, well a simplest answer to inlaws prob is BE IN THEIR LAWS AND YOU WILL BE ALWAYS HAPPY.. ask your mil to tell you her recipe, rather than trying to win over her by competing with her..see how much love you get :)
not only that, your mil is elder than you, so i suppose, she will b always expecting her dil to be at par with her, because she knows that tommorrow you are going to take care of everything, once she is gone.as a mother and incharge of family, she wants to you to be just a little bit better.
believe me, take it from a person whose typical vaishnav south indian mother in law never wanted to get her son married to gujarati brahmin girl !!! and wanted to get her son married to south indian girl who was her best friends daughter even after marriage happened with everyones' blessings..it was hard..
hope you got the idea..once you are good in taming them, you can edit your ways smartly and believe me, by that time, they will not care to argue with you, rather trust you.
its not like bowing your head or accepting everything they say,, before them, but its like winning over them with an easy approach without a single arguement, and with different strategies and being a real part of family rather than just name sake.
hope it helped.let me know if you dont succeed with your recipe, i will post my mil recipe that i use but only after you tell me that you have tried :)...
Good luck,
Hetal
Aarti replied. Hi Supriya,
If you got a chance to see the recipe, the wheat dosa is one of those instant type recipes which can be done in a few minutes. You can easily do it on a weekday. There were some evenings when my son was 2. He would be overtired/sleepy and didn't feel like having his regular meal. He would usually eat the wheat dosa without a problem. So I quickly made it as hubby and I had our dinner. I don't allow him such luxury at 3 1/2!!
It is NOT like the usual dosa batter at all. The batter is much more watery like rava dosa. Ofcourse it is not the only quick recipe and you cannot center all your son's meals around it :-) There are tons of other recipes. I understand how frustrating it must be to make healthy recipes after a long day at work.
As for the freshness of regular fermented dosa batter kept in the fridge, I went by the advice of my aunt who has done this in the US for twenty years. Since she was confident about the freshness (and very particular about hygeine & food quality) I trusted her. I have not found any problems so far. But I really have no idea about its quality if kept like that in India. I wonder if your friends in India who are working moms will have tips.
You are India based, correct? If not, then I am totally mixed up! Sorry :-)
Good luck!

aarti, i agree its an easy recipe but you have to understand that its new for me and i cannot afford to try new foods or recipes on weekdays at this point.i come at home at 8 night and then i start cooking. if the meal doesnt go right on table properly i will be screwing up everyone dinner including my little one.and i have to consider that mil will be always ready to fire me.
but i will not feel comfortable giving my family old batter. first of all my mil will not allow me. she is very health conscious and she wont be convinced by the fact that it needs to be stored. she is fresh freak.
thanks for your inputs.it was a great help.i will surely try it on weekend and let you know.
