Hetal replied. hi, the ghee is yellow(not pure yellow,its yellowish when jammed or when melted,,you can smell the aroma of it), it means its pure cow ghee ! cows ghee is always yellow in colour if its not then it has other animals milk like goat,buffalo milk used for the purpose of making ghee.
white ghee contains all animals milk and is often not called as pure desi ghee ! also contains high fat than yellow ghee or cows ghee since buffalo milk(buffalo being one of the contributor to it) is the creamiest or to say highest in fat and heaviest to digest.also, making ghee out of buffalo milk is easier because of high fat content than cows milk !
if you are interested in making it at home, get the big pack of unsalted butter,boil it to the extent that you will see a layer of particles that are brown in colour floating,,,,,remove them thru seive and let it rest to cool ! once cool, tranfer to a clean, air tight jar..
this product is called clarified butter in US(often used by native americans and italians for some special meats)
if its white in colour, then understand that its not only cows milk but the butter had other animals milk as well,if it turns out to be yellow (not pure yellow),,then its cows milk only thats involved in making that butter !
this doesnt spoil,,and stays upto 1 month,,with or without fridge ! however, storing in fridge is always a better option !

Mom replied. Try the plain unsalted butter from regular grocery. The ghee is definitely not yellow in color.
I avoid perishable items from Indian store since I am not sure about their storage practices. They sometimes keep their items (like ghee, milk powder) in a non-AC warehouse for many days before it comes to the store. This is especially true in the summer months.

I get butter from indian store and prepare desi ghee, but it's color is yellow. I was just thinking is it a good idea to buy ghee which is in white color.
