Eating Problems:Diet for 16 mths old....pls HELP!!

Hi

I have a 16 months old who doesnt sleep well through the night. WHenever she wakes up i give her water, but sometimes she insists on having milk and i have to give her a middle of the night bottle.
I follow the following diet pattern for her:
6.30-7am Milk (usually she has anywhere between 100-150ml)
9am Raagi/Suji/ Mix whole grain kheer 1 bowl
12pm 1 bowl Rice and Daal/Kadhi
4pm Boiled mix veg blended in a mixie - 1 bowl
6.30pm 1.5 medium sized fulkas (thin rotis) crushed with milk and vegetables
9.30pm Milk 100-150ml

I usually avoid ready to eat cereals unless when I dont get time to make home food for her once a way. SHe loves to eat these though.

Do you think I am not giving her enough to eat during the day? Would that be the reason she doesnt sleep through the night?
SHe sometimes fusses a lot and leaves food half un eaten even from whatever I serve her during the day.
How can i get her to eat more during the day and how can i get her to sleep through the night?

Also, how can I get her to accept chunky food?
she sometimes spits any chunky food. She likes to eat only mashed food. she has 4 upper and 4 lower teeth and also 2 molars.
