Here's a recipe which I use. Its quite easy. Wash and cut button mushrooms (1/2 packet i.e around 5-6 mushrooms). Heat oil in a pan and add little jeera. Then add half or one chopped onion and fry till it becomes little brown. After that add a tsp of giner and tsp of garlic paste. Fry for another 30 seconds and then add half or one tomato and again fry for a minute or so. Then add the mushrooms, salt and masala (like chilli pd, haldi, dhania pd, jeera pd whatever u like). Mix well, cover the pan and keep on low fire. Keep on checking and stirring in between. Once its cooked its done. Lastly add cilantro. Hope u like it. If I get any more easy recipes, will send it to u. Bye for now.

1/2 lb mushrooms
saute in two tblspns butter
add to this...
2 cups chicken stock or water
1/2 cup chopped celery
1/4 cup sliced onion
1/8 cup parsley, chopped up
simmer for 20 minutes
separate vegetables from broth in 2 pans or containers.
blend the vegetables in a food processor or chopper.
in another pan make a white sauce...
2 tblspns butter
2 tblspns flour
low heat, blend for 3 - 5 minutes
slowly add 1 cup milk, heat.
when hot, slowly add the reserved liquid from the vegetables. stir but try not to boil. add the minced vegetable medley.
season with
1 tsp salt
a little paprika (optional)
a little nutmeg (optional)
a little dry white wine (optional)
parsley or chives (optional)
cream of mushroom soup is truly a comfort food. it has a wonderful smell and taste. serve hot with bread, naan, parathas, etc. this soup, tho a bit complex to make as opposed to the sauteed mushrooms, may be the best way to experience champignon mushrooms. portobello mushroom soup would also be incredible.

melt butter in a skillet. you may want touch of olive oil/ghee/etc to keep butter from burning. add some minced onion . stir. add fresh mushrooms...they can be sliced or whole. stir gently while cooking. add a little fresh or dried parsley, salt, pepper.
serve while hot.

yes, that was Chicken Stock OR Water, so it can be vegetarian. You could probably use Vegetable Stock/Broth/Boullion, too.
In my opinion, Cream of Mushroom soup is the ultimate for truly tasting the flavor of the mushrooms. Their flavor is very delicate and can easily be overshadowed by too many herbs or spices.

hi naresh,
since u want chinese/thai type recipe for mushrooms, u can try this. i have never tried, so maybe u can experiement and if its good i too can make it.. ha ha ha, howz the idea. anyway, since i make many other chicken chinese dishes, i thought u can try this & substitute with mushroom. Heat oil, add chopped spring onions (or regular onions), then add chopped mushrooms and fry for 1-2 minutes on high. Then add little bit of soya sauce, ajinomoto (or regular salt) and little chilli sauce (or maggi chilli sauce if u dont have the actual chinese chilli sauce). Stir and have it hot with rice. Also alongwith spring onions, u can add chopped/sliced capsicum, sliced carrots, etc. (all these r optional). Let me know if it turns out good.
