INGREDIENTS:
15g ghee, 2 oinions, finely chopped, 1 tsp yellow mustard seeds, few dried curry leaves, 1 tsp chillie powder, 2 cloves garlic, crushed, 1/4 cup tomato paste, 1 tbsp sugar, 2 tbsp plain flour, 2 cups vegetable stock, 400g can tomatoes, 1kg tomatoes, peeled, chopped.
method
Heat ghee in pan, add onions, cook onions until brown. Add mustard seeds, curry leaves and chillie powder, cook 1 min while stirring. Add garlic, tomato paste, sugar and flour, cook 1 min while stirring, gradually stir in stock, crushed, undrained canned tomatoes, and fresh tomatoes, bring to boil, cover, reduce heat, simmer 1 hour, stirring occasionally. Serve soup with about a tbsp of cream in each bowl if desired.
