Vegetarian Food:Vegetables, Curry, Subji?

Hi,
If anyone know diffrent variety vegetable recipe in everyday cooking, please pass to me. I am tired of same sabji like eggplant, aalu, cabbage so so. If anyone have new idea which does not take too much time after work.

Subject:  brinjal with corriander



cut fresh brinjals, fry mustard and add brinjal and salt to taste, sprinkle little water and close till done, grind green chillies and coriander leaves to a paste and add it to vegetable cook for 2-3 mnts in sim and it's done.

The same procedure can be used as stuffed brinjals.

Subject:  aloo beans



chop aloo and beans finely. give a seasoning of mustard seeds ,haldiand slitted green chillies. put the aloo and beans. put soem salt and saute them. cover the pan with a lid and allow them to cook on a low flame. when done, sprinkle red chilli powder and saute.

Subject:  veg recipe



chop carrots finely.heat a little oil,add mustard when they split,put some ricegrains and when they inflate add chopped carrots.add salt to taste and keep closed to cook.do not add water.grind cumin seeds and curry leaves and add to carrot.add grated coconut & a bit chilli pwdr.cook again for 5 minutes and when the dish is dry ,remove frm heat & serve.
u can repeat this with any veg like beetroot,cabbage,brinjal,cucumber,karelaor spinach.
