Vegetarian Food:South Indian Chutneys! Help

Iam very eager to learn some south Indian chutneys, which are specailly eaten with Idli(dried and liquid).Help me please.

hi there,
here is a recipe for chutneys that can be used as an universal formula
take any vegetable/combination of vegetables say one cup
jeera 1tbsp chillies 4-5 red/green
garlic 5-7 cloves
tamrind size of a small lime
saute the vegetables(the need not be fully cooked) max 5-10 min depending on the vegetable you choose. take them out splitter chillies,jeera and garlic(some times i add them raw)put them along with the veggies and grind them roughly add salt to taste. season it withmusterd channa and curry leaves.

Coconut chutney

Ingredients:

Shredded coconut-1 or 2 cup
Two-3 green chillies/red dry chillies
Ginger- 1 or 2 small pc
Onion- one-fourth (if big)
Mustard seeds
Red dry chilli-1 or 2
Oil-1 or 2 tsp
Curry leaves-5-6

Make a paste of above items (from shredded to oninon above) .Heat oil in a pan and put mustard seeds and when they start spluttering add some chopped onions(4-5 pc) into it.Stir it until it gets transparent and then put red dry chillies and curry leaves .Now when they change their color (don't burn it).Put the paste in it and stir for a second then add little water to it.Let it boil for a minute or two.When it starts bubbling .put off ur gas and take away 2 enjoy with ur idli/dosa.It is the best chutney 4 dosa and idli.

Subject:  Coriander chutney for idli



Ingredients:
Coriander leaves - 1 bunch.
Grated coconut - 0.5 cups
Tamarind - about half an inch
Asafoetida - a small amount (as per your taste need)
Chana dal - about 1 tablespoon

Roast the channa dal in about 1 teaspoon of oil till it turns slightly brown. Immediately transfer only the dal into water and let it soak for about a minute or two. Now mix all the other ingredients along with salt and grind into a chutney. In the oil that remains, season mustard and add into the chutney. If you like you can add a sprig of curry leaves into it. Chutney is ready for idli. Try it and let me know what you think of it.
