hai,
i love kofta curry a lot.i ahve tried making it many times but it was not good.i live in usa and i want to what i can add instead of malai,as i don't know where can i find it.

Hi Kavya,
you put malai in curry 7 u also put a little khoya(mawa) in it this will add richness to the kofta curry. Try it & tell me.

instead of malai...u get heavy whipping cream in any of the grocery store...mostly near diary product refrigerator...so u can chk that out...

i use that for most of my north indian preparation.....

Subject:  Paneer-Aloo Kofta Curry



Hi Kavya,
U can make Paneer-Aloo kofta curry or
Yam(Suran) Koftas , lauki Koftas or Mushroom Koftas, depending upon what u like...

Here is recepie of Panner-Aloo kofta curry without malai in it...

1) Boil Potatoes.
2) Mash Paneer and Patotoes. Patotoes should be more than Paneer.
Say 60:40 ration.
3) To this micture add kotmir(hara dhaniya), garam masala, salt, roasted zeera powder, hari mirch.
4) Roll them into balls or cylinder shape, Whilst rolling them you can also insert a kismish in each of them, if u like..

For the curry:-
1)Take a pan and add oil to it.
2) Add full flakes of garlic
3) A food amount of adrak cut in medium sized bars .
3) When the garlic changes its colour to golden brown add Onions, long sliced
4) When the onions are slight brown, add plum peeled tamatoes puree or fresh tamatoes to it. Mix it all.
5) When the tomato softens, wait till the mixture cools and puree it in a food processor. Let the food processor go on for 7 to 10 mins.
6) In your pan , now add a little oil and put some zeera. When they start to crack add the mixture prepared in step 5 to it. Add all the masalas, i.e sukha dhaniya, lalmirchi, garam masala and mix well.
7) Cook this mixture for a while say 10 mins till it is evenly brownish-red in colour and oil seperates out from the masala.
8) Now add boiling water to it and let it boil for a while.

Now fry the koftas on high fire and just before serving add them to the gravy.
