Hi,
I have a query.Whenever I make palak paneer ,the fresh green colour of palak is not retained till the end of the preparation,infact it turns into dark green or brown.I do add garam masala to it.Can anyone tell me how to retain the green colour and send in a recipe too?

when ever i make palak paneer i usually add a lil bit of Eno to the water and boil it then add the the spinach to the water and boil try it its amazingly green even if its reheated the next day

take the leaves and soak for 1 minute in boiling water . next cool under running water immediately. pat dry on akitchen towel. use as u need.
do not boil the palak paneer for long say more than 4-5 mts after adding palak puree

Hi Simi,

Alternative to the abv recepie, you can also make palak paneer in the following manner if the colour wanted is perfect green...
1) Saute the onions.
2)Add GingerGarlicGreenChillies paste.
3) Add finely chopped tamatoes, soften them.
4)Mean while put the spinach to boil in an open vessel. Don't cover with any lid. When the water boils, switch off the gas and blend the palak to a puree.
5)Add this puree to the tamatoes.
6)cook the palak for a while. Do not cover it with lid. When palak is cooked add double cream to it. Mix well.
7) Add salt ,mix, add paneer pieces or grated paneer, cook for 2-3 mins and its ready to eat.
8) Avoid using masalas in the abv receipe, but it really depends on your taste...

1) Boil 1 bunch of Palak in pressure cooker ( 1 whistle).
2) Grind the palak in a blender.
3) In a pan, add oil, use liberally.
4) Add 5-7 flakes of garlic . Fry till brown.
5) Add grated adrak(2 inch piece) and 2 green chillies.
6) Add 1 medium sized onion and fry till slightly brown.
7) Add all masalas, dhaniya pwr, pinch of red chilli pwr and garam masala, curry pwr if reqd.
8) Mix well.
9) Add Tamatoes.
10) When they soften add palak puree.
11) Fry 1 tsp zeera in little oil and add the bagar to palak.
12) Cook the palak for abt 5 mins. When the oil seperates , assume it is done..
13) Add salt. Mix well.
14) Add panner pcs and cook for other 5 mins.
