Due Date Club December 2005:Eating Vegetables!

Hi to all!

During pregnancy, it is very important for all of us to eat lots of vegetables and daal. But, I am sure, that we all get really bored eating the same type of dishes everyday.

So, following are some dishes/recipes that I have discovered in the last few days (as I had got really fed up of eating vegetables cooked in the normal way):

1) Daal with vegetables:

Take vegetables like tomatoes, onions, cauliflower, beans, cabbage, carrot, ginger etc and cut them into small pieces. Take any daal of your choice (you can keep on trying different daals on different days). Add water, vegetables (cut into small pieces), salt, a bit of heeng (asafetida) & turmeric (if you want) in the daal and cook it in the pressure cooker. Wait till atleast 10 whistles (the number of whistles will increase depending on the type of the daal you are cooking, but minimum should be 10). Then, take oil/ghee in a separate pan, put either cumin seeds & pepper or curry leaves, mustard seeds & pepper (depending on the daal or the taste, that you want to have). Let it (either cumin seeds or mustard seeds) splutter in the oil/ghee. Now mix this tadka (spluttered seeds in oil/ghee)in the daal and serve with either chappatis or rice.
This tastes really good and has all the good nutrients of the daal as well as the vegetables.


2) Nutritious and Delicious Vegetable Soup:

Take tomatoes, onion, cauliflower, beans, carrots and cabbage. Boil all these vegetables with water and salt in the pressure cooker. Let it boil for around 10 whistles. Take this mixture and grind it properly in a blender/mixer. Take a strainer and strain this mixture through it (all the rough things and tomato seeds get eliminated by this way). Now, make it warm, add some pepper and butter and serve hot!
Believe me, its verrrrryyyyy tasty and nutritious!

Dear Sonal,

Thanks for the lovely recipes. They sound quite interesting! Ive treid the Soup and its yummy. Will have to try the dal.

You can also try the dal making it into a soup and add some palak into it.

Try making a regular tomato soup a little thicker with lots of vegetables and some noodles in it. That makes a wholesome meal.

Make idlis with dill leaves. They taste yummy and you can increase your intake of green leafy vegetables in that form.

I will surely try out the soup, with vegetables (including palak, as it is a very good source of many vitamins)and noodles. It sounds to be tasty! By the way, what are dill leaves? Do let me know that.
