Vegetarian Food:Pumpkin Pancake

Name: Simi Khan



½ cup unbleached all-purpose flour
½ cup whole wheat flour
1 tablespoon baking powder
½ teaspoon salt
1 tablespoon light brown sugar
1 egg
¾ cup milk (any kind)
½ cup pumpkin puree
1 tablespoon butter, melted
¼ teaspoon cinnamon


Melt butter in microwave or over stove top. Do not let it burn. Set aside to cool.
In a separate bowl beat together eggs, milk, pumpkin puree and add cooled
butter. Set aside. In a large bowl mix together the flours, baking powder,
brown sugar, cinnamon. Add the egg mixture, but do not over mix. Drop by
the spoonful into a preheated nonstick griddle or skillet. Cook over
medium-high heat until bubbles appear on the surface. Turn once cook on
other side. Serve immediately. Makes about 8-10 pancakes.
