i have a recipe for stuffed capsicum.

take samll sized capsicum.

boil potatoes and mash them properly. add salt, red chilli powder, turmeric, garam masala to it and mix well. u can add green coriander also.

wash the capsicum, now u have to make the capsicum hollow, bit tricky, from the top with the knife take out the stick along with the seeds, u have to be careful doing that. once it is hollow fill it with the mashed potatoes.

now in a thick deep pan take some oil, little bit more, and put the capsicum in it, keep them on low flame until done.

serve with raita and chapptis.

enjoy.

capsicum-tomato-potato subji

take around 2 capsicums, 1 tomato, 1 potato.
cut all into medium square pieces. heat oil and add rai, jeera, hing. when seeds crackle, add the chopped vegetables. add little water just enough to cook. after a minute or two, add chilli powder, turmeric, dhania-jeera powder, salt to taste. cook until done.
serve with chapati or rice.
VARIATIONS :
1. you can even add onions in the beginning.
2. instead of square pieces, cut them lengthwise and then cook. don' t add tomatoes in this case and cook it dry (tomatoes will make it watery). tastes great with parathas.

another recipe - this is my favorite and learnt it from my mum

Cut capsicum into tiny square pieces.
heat oil (a bit more than usual). add rai, jeera and hing. add capsicum. as far as possible try to cook this without water or add only a little bit. thats why we need enough oil. when done, add chilli powder, turmeric and salt. mix well. then add around 4-5 tablespoons of besan, enough to coat the capsicum. cook until done. the besan shouldn' t taste raw.

good luck !! there is also a recipe for stuffed capsicum but its complicated and i am not good at it. may be somebody else can help.

Wash capsicum and cut into pieces. Remove the seeds, fry with little oil till it becomes soft (The raw smell shld go) and add green chillies and then grind it in Mixie softly. Add this ground paste to fresh curd and put salt to taste. You can season it with Mustard seeds if you want. A very good dish for rice varieties.
