I am very much interested in making cakes. I have whirlpool micro-oven. Can anyone help me giving a good recipe for regular soft cakes and the procedure for baking it in my oven?

Can anybody tell me how to make cakes in a pressure cooker...i don' t have a microwave. But I surely know, we can make cakes in pressure cookers...but don' t know how...can some one suggest??

Subject:  Basic Chocolate cake Recipe



/2 cup butter
2 cup sugar
3 eggs
1 1/2 tsp vanilla
3 sqs unsweetened chocolate, melted & cooled
2 cup cake flour, sifted
2 tsp baking soda
1/2 tsp salt
1 cup sour cream
1 cup boiling water

Beat butter and sugar together in large bowl. Add eggs, beat until light and fluffy. Beat in vanilla and chocolate. Sift dry ingredients together, add alternately with sour cream to butter mixture, beat well after each addition. Stir in boiling water (batter will be thin). Pour into 2 greased and floured 9-inch layer pans. Bake in preheated 350 degree oven 35 minutes or until cake tests done. Cool in pan 10 minutes.

Subject:  Basic Chocolate Sponge Cake Recipe



7 eggs, separated
2/3 cup plus 2 tbsp. sugar
Pinch of salt
2 tsp vanilla
1/3 cup plus 2 tbsp. sifted cocoa

Preheat oven to 350 degrees. Line jelly roll pan or cookie sheet with sides with foil, overlapping the ends. Grease and flour foil.
Beat egg yolks and 2/3 cup sugar until thick and tripled in volume. Beat in vanilla. In clean, large bowl beat egg whites until foamy; add remaining 2 tablespoons sugar and pinch of salt. Beat until stiff peaks form.

Fold 1/3 of whites into yolks to lighten. Sift cocoa over top of this mixture and fold in gently. Fold in remaining whites. Spread in prepared pan and bake 15 minutes.

1/2 cup butter
1 cup sugar
1 tsp vanilla

1 tsp baking powder

Mix butter and sugar. Add vanilla and eggs; mix well.
Add flour and baking powder; mix well. Bake in 350 degree oven approximately 25 minutes

To change flavor of basic cake:

Add:
3 tablespoons cocoa or
1 teaspoons cinnamon and 2 cups apples, chopped or
1/2 cup black walnuts or
1/4 cup butter, 1/2 cup brown sugar and 1 cup crushed pineapple mixed together in bottom of pan.

i wd love to know some quick marathi dishes. Reason? i am a marathi myself but married to non-marathi ... and donno too much marathi cooking ... my hubby loves marathi food and asks me to cook some.

I also a maharastrian with RATNAGIRI,DAPOLI native, married to Tamil iyer. I am very happy to konw that you are also a maharastrian. Since you are a maharastrian you specify any dish which you are finding difficult or any thing you come across new or different one because, you must be knowing most of the regular basic dishes. it is possible to make v good spongy cakes in microwave! Though you can pick the recipe from any site like sanjeevkapoor dot com or tarladalal dot com, i m listing a Nita Mehta recipe of chocolate cake for u.

1 tin condensed milk
1 1/2 cup or 300 ml milk
2 cups or 175 gm maida
1/2 cup cocoa powder
(if u want to make vanilla cake then 2 and 1/2 cup maida and no cocoa, add 2 tsp vanilla essence)
3 TBSP sugar (note tbsp and tsp's)
1 cup or 180 gm softened white butter
2 tsp baking powder
1 tsp soda-bi-carb or mitha soda

Method:
sieve maida, coco powder, baking powder and soda bi carb and keep aside. Sieve well so that there are no lumps at all so if needed sieve more than once

- in another pan, beat butter and sugar together (add essence if vanilla cake)

- add milk and concensed milk. beat well

- add the sieved flour gradually to the beaten butter and keep mixing
beat well for 5 mins till mixture is light and fluffy and ensure no lumps

Your cake mixture is ready. For first time cooking, i wd say take small glass bowls (katori). Grease it with oil and sprinkle some atta (this will ensure cake doesnt stick to bowl)
Put 1/4th katori full of beaten mixture.

For successfully making cake in microwave u will hv to use trial and error method first time to see how much time ur microwave needs to cook what amount of cake-mixture, so thats why i said start trying with small bowl and gradually increase the quantity so that ur mixture doesnt go waste on an error.

I have BPL microwave and for a small bowl cake it takes me 1 min 30 sec apprx, and at second highest power, to make a fluffy cake.

In a borosil cake bowl for twice the quantity mentioned above, it takes me apprx 4 mins to make a wonderful spongy cake.

To ensure cake is done from inside, dip a knife in cake and if it comes out clean, ur cake is ready.

Once u master simple cake, u can try out diff variations by addind raisins, dates, etc so it is good for kids too.

I hv even tried without condensed milk and it works equally well. I dont remember the quantities now as i m used to making cakes so mix it by experience.

But right amount of items is v imp for making a good cake. Otherwise ur cake will spoil.

When i dont hv time, i use Pilsburry ready to make cake mixtures. They also come out well and i can decorate it the way i want. I put some cold liquid coco+sugar mixture on its top and sprinkle grated chocolate above, looks and tastes good!
