For a young toddler:
Morning (on waking): Milk (5-8 oz)
Breakfast: Sooji/Nachni/Oats/Idli/Cereal. Let her have whatever she likes. If she doesn' t like oats, just omit it from her diet. Add a little ghee, 3-4oz milk and a bit of sugar to her breakfast.
Mid morning: Milk + fruits/biscuits/eggs/french fries/carrot sticks/etc.
Lunch:Rice/Roti + Veg/Chicken/Fish/Eggs or instead you could just give her pulao (with 4-5 veggies chopped fine and cooked with the rice + some chicken stock)
Evening: Milk + fruits/biscuits/custard
Dinner: Same as lunch
Before going to bed: Milk (5 - 8 oz).

If you want to increase her weight, don' t do it superficially by adding too much butter / ghee. Instead, try offering her food like chicken, eggs, yoghurt, etc, which will help increase her weight the healthful way.

If her weight doesn' t increase, don' t fret. As long as she is active and doesn' t fall sick often, she' s fine.

My son is 19 months old and I have just started potty training him. The key is DO NOT EVER FORCE HER TO USE THE POTTY or TO SIT ON THE POTTY. If she poops at a specific time every morning, then you could sit her on the potty a little before that. Let her sit. If she wants to get up or refuses to sit, just allow her to do so. If she sits for a while, but gets up without doing anything, praise her and let her go. If she sits willingly, then remove her nappy every 3 - 4 hours and allow her to sit on the potty. Let her get used to the idea of sitting on it.

Once she is successful in pooping or peeing, praise her a lot, and let her go. Slowly, she will begin to tell you when she wants to use the potty. Until then, keep returning her to the potty every 3 - 4 hours. If at any point, she seems disinterested, put the potty away and try after a week.

I don' t understand what you mean by ' raising her legs' for potty. Does she poop lying down ? If that is the case, then try to get her to poop by squatting (like on an indian loo). Otherwise, she may find it difficult to poop in the potty. All the best.
