Eating Problems:Planning diet for 1yr old

Hi,
My son completed 1 yr recently. He goes to an american day care. She gives him boiled vegetables (like brocolli, carrots) for lunch and morning some waffle or bread.
Now in the night, I try to give him indian food. so far I gave him toor dal boiled with some vegetable (added with little salt) mixed with cereal. He eats that with no problem.
But other than that he does not eat anything like rasam, idli , upma etc. He does not eat rice also and I remeber he vomitting few times when I give him mashed rice with daal.
How can I get him to used different tastes of Indian food including rice.
can someone help me figue out a diet plan to do this.

Breakfast options !

1 cup cereals - serve rice cereal, cooked mashed dals check consistency dont be harsh on little tummy !

1 cup fruits - Mashed ripe banana is really kiddies favourite. For a change go for Apple Stew . Or mashed papaya in combo of sapotaa.

Snack

Small quantities of Juices of orange, grapes, pomeranate can be given . But balance it out such a way that baby doesnt get habitual to sweet stuff. Its the time when they develop habits. Its in ours hands totally.

Cooked and mashed veggies (peas, carrots, bottle gourd).

Lunch options

1 cup yoghurt or yellow vegetables .

1 cup Mashed dal and rice.

1 cup Vegetable soup.

1 cup Roasted Wheat porridge.

Snack

1 biscuit , flavored Custards

Milk

Dinner options

Mashed boiled Potato a pinch of salt. Tofu , Green veggies (peas, carrot, cabbage, beets, spinach)

Before sleep : milk .

To prevent tooth decay wipe teeth with wet cloth.

Avoid High sugar content foodies.

Prefer food items that are less salty and spicy.

Thanks for the suggestions on food.
I have few questions.
1. Can you tell me how to make vegetable soup and roasted wheat porridge.
2. How to make flavored custard. Is it ok to use store bought custard powder.
3. What is the best way to give the Tofu. fried??
