Hai all,
my friend used to tell me that i make nice soft idly.in however correct proportion she makes idly it is not coming soft itseems.once when i went to her house i saw that she was mixing the fermented flour while pouring idly.i found out that this was the mistake she is doing while making idly.when u pour flour in idly plate u should never mix the fermented flour.u should pour as such.only for dosa u should mix the flour and make dosa.
i think almost everyone will know this.but iam telling this for persons who r like my friend.i hope atleast 1 or 2 will benefit by this.

thank you for that info. any little insights are always appreciated for passing on.

one little 'trick' or something like that, that i sometimes do is put soda water or club soda into flour, etc, to help make them lighter. i don't know if it 'really' works, but in my mind, at least, i think it does. not sure if it wd work for idlis, in that they have to rise for so long, tho.
