Hey all,
Can anyone give me the receipe for the tamarind chutney that is served with samosa and other chat items etc. Thanks in advance.

I make it like this...

Use Tamrind pulp (ready or made out of soaked tamrind overnight). Put it on heat with Lot of sugar + salt+ Black salt+ freshly bhuna Jeera (ground up)+ a little red chilli powder + water to consistency. Let it boil and then cook on slow heat for 30min or so. At this time taste it and add more ingredients to your taste. If it tastes too sour, you probably need to put more salt and sugar. If you like it more sweet, just put more sugar. The chutney will thicken later on so make sure it is not too thich when you stop cooking. Add more water for ir. Make sure you cook the water well before stopping the cooking or else the water will seperate from rest of the chutney.

Some people also put Khajoor or Rasins in it.

Hi swati here is the receipe take tamarind lump size ,add jaggery/sugar/brown sugar ur wish to ur taste,jeera powder 1 tsp,salt,rasins(optional),little black pepper powder add water and boil till thick and strain it when cool.store in a bottle and will stay outside upto 15 days(make sure boil properly),more than a month in fridge.Happy cooking! hope this helps...

Ingredients:

Tamarind 1 cup
Jaggery 1/2 cup
Sugar 2 tbsp.
Red chilli powder 1/2 tsp
Black pepper powder 1/4 tsp.
Roasted cumin powder 1 tsp
Cloves 2-3
Warm water 2 cups
Vegetable oil 1 tsp.
Salt to taste

Method:

1. Remove the seeds from tamarind and soak it in water for 20 to 30 minutes.
2. Heat oil in a pan and add cloves. Fry for about 30 secs.
3. After half an hour, take out the pulp from the tamarind and add jaggery, sugar, red chilli powder, black pepper powder, roasted cumin powder, cloves and salt.
4. Cook the tamarind mixture for 5 minutes on medium. Remove from the gas and let it cool.
5. On cooling, blend the contents in a blender..
6. Strain and cook until it becomes thick.
