hai all,
does anyone know the recipe for making parattas and naan?i want to know how these parattas are coming out multilayered.i ate in hotel.i tried at home but i dont know exactly how to do and it is not coming layered

hi ananya

if u want to prepare multi coloured paratha try out with spinach and carrot.
when u mix the dough
1. mix it with grinded boiled spinach.
2. mix it with grinded bolied carrot.
3. plain dough.
take small portions of the 3 and prepare the paratha.

how is the idea?

hey ananya,

well if u ask me i find parathas to be very easy.

well wen u bind the flour(wheat or maida) together add a some salt to it depending on the quantity of flour.
when the dough is made take small amount in ur hand and roll it into a circle.the spread a little oil or ghee on the top and fold it into a semi circle.then again apply a little ghee and fold it again into a traingle.then dip in flour and roll it out into the traingle shape paratha and cook on ur non stick frypan or tawa.serve hot with nay gravy item.

yum, i love parathas, too. i've never made them from scratch, but i do buy them frozen at the indian store and cook em up.

i do know how the layers get there, though. they are, essentially, the same thing as croissants in france. croissants have a lot of butter in them. the dough is covered with butter, then turned on itself. another layer of butter, and another turn. after each turn they are flattened out again. it makes a layer of butter, a layer of dough. then when they hit a hot oven the butter expands and makes the layers.

the main difference, as i see it, is that parathas are cooked flat and croissants are rolled up.

too much work for me. i'd rather just buy them frozen or get them at a french or indian bake shop.

ok, now i'm hungry!
