Subject:  Eggplant



Ingredients

- 1 round shape Eggplant
- 1 big Onion
- 1 Bell Pepper
- 2 Tomato
- 1 tsp Tomato Sauce
- to taste Salt
- 1 tsp Ground Black Pepper
- 1/2 tsp Red Chili Powder
- 4 tsp Sour Cream
- 3 tsp Cooking Oil
- 1 handful grated Cheese


Instructions

1. Cut the eggplant, green bell pepper (remove the core and the seeds) and the onion in round shapes.

2. In a flat frying pan pour the oil and lightly fry the eggplant pieces and set aside.

3. Puree the 2 tomatoes and in a saucepan bring it to a boil and then let it simmer on medium heat. Add salt, pepper and chili. Then add the sour cream and ketchup and let it simmer for 3-4 min. The paste should stay liquid.

4. Now take a baking dish and start setting single layers of brinjal, then onion and then capsicum and repeat the process.

5. Now take the puree and pour it all over such that it seeps into the layers. Cover with grated cheese. Preheat the oven on 350 degrees and set the dish in for 25-30 mins.

Ingredients

- 1 Lb Okra
- 1 Onion
- 2 Green Chili
- To taste Salt
Conversion Chart

Instructions

1. Wash and with a knife trim the stems and tips from the okra and then cut across into thin slices. Add turmeric powder and salt and mix. Chop onion.

2. Heat oil, add onion and fry till soft. Add okra and continue frying till done. It should become a little crispy.

3. Serve hot with any chapati.

ALU PALAK
Ingredients
Frozen spinach - 300 gms ( 1 packet) (or you can use fresh spinach as well- 1 bunch)
Onion-1 medium size
Tomato-1 medium size
Cummin seeds- 1 tsp
Cashew nuts- 8-9
Green chillies- 2 (may be 4 if you like it hot!)
ginger- 1 inch
Butter- 2 tbsp (melted)
Potatoes- 2 large
Method:
Boil water (0.5 to 1 liter) and add frozen spinach and cook until done ( may be 5 min)
Strain spinach and blend it to smooth paste with little water
Boil Potatoes with skin until done. Remove the skin and cut in to cubes. Saute them in butter(1 tbsp) until golden brown and keep aside
Grind Onion, tomato, cummin seeds, cashenuts, green chillies, ginger to fine paste with enough water.
Melt remaining butter and add ground paste of step 4. Saute until the butter starts to form a layer on top of the paste
add the spinach paste and mix well. Add salt to taste.
cook for 2 min and add the potatoes and its ready to serve.
