kevin replied. i wasn't sure what you were asking. are you currently using a cake of fresh yeast or a sourdough starter and want to know how to modify based on that? are you wondering how to use dry yeast? (mix w/ 2-3 ounces warm (not hot) water. let sit for 10 minutes or so. or if you use a breadmaker, just throw it into the mix of wet and dry ingredients at the start of the cycle) you can give a spoonful (small) of sugar to feed the yeast, too.
if you have a breadmaker, you could put the ingredients into the container and put on 'dough' cycle. this won't bake the dough, just knead it. then you can take it out, let it rise, punch it down, let it rise, etc, and bake as bread, rolls, naan, pizza crust, etc.
the main ingredients to any bread are:
breadflour (from wheat. all purpose flour will work, but breadflour is better for bread), water, yeast, a little salt (too much kills the yeast, too little makes it taste flat), a little sugar (to feed the yeast)(optional), a little shortening (optional)...your choice of shortening...butter, crisco, veg oil, ghee, olive oil, etc. keeps the bread moister longer.
