u can make pumpkin raita.
cut the pumpkin into thin long pieces. then boil in cooker or microwave.
cut the onions into thin long pieces.
Ina pan heat oil and fry mustrud, urud dhal, zeera and few curry leaves. put the onion and fry for some times.
then Now allow it to cool. then add the boiled pumkin pieces with that onion and add curd and salt.
It is better to add salt with pumkin while boiling.
It is good to take with sambar rice.
kevin replied. i know a bit about pumpkin, but maybe not everything.
they are not sweet by nature, tho there is one small type called sweet or pie pumpkins. they are slightly sweeter than the others and are used for making pumpkin pies. but, part of that is because the smaller varieties have a smoother texture making it easier for eating as a dessert.
for the most part, though, treat it as you would any squash. bake it in the oven in pieces or whole (but cleaned out) with butter and spices. they can be spices for sweet or savory dishes. if you bake it whole you can then add a soup or stew or rice dish, etc, to the insides and serve it on the table. the indians of north america (where pumpkins originated from) did this often. in new mexico, usa, the indians often bake chicken & rice inside of a pumpkin...or cook it and place it in the baked pumpkin right before serving. when you scoop out the insides, you also scoop out some of the pumpkin to serve on the plate. a cooked pumpkin would be perfect for serving a biryani dish or almost any stewed indian dish such as a curry, etc.
you can also boil the pumpkin pieces, mash them, and use them as a starch like mashed potatoes with lots of butter & savory spices or sweetened with sugar, syrup, butter, etc, and sweet spices. you can also make bread or muffins out of the mashed pumpkin.
don't forget to spread the seeds out on a baking pan, sprinkle with salt & hot (picquant) spices and bake in an oven until crisp for a wonderful snack before dinner.
good luck. i hope this gives you some good ideas with what to do with your pumpkin. (you must be in the southern hemisphere, as it is fall there now, and pumpkins ripen in the fall. in the northern hemisphere they are just being planted)
