Can anyone suggest me a recipes using redkidney beans

ok, so i found a recipe from zatarain's. (spice company in new orleans) it has meat in it, so omit it for vegetarian purposes. (or substitute soy 'meat' or other vegetable). here it is. i have not edited it. and of course, you can always add more spices.

Louisiana Red Beans

1 lb. red kidney beans
1 lb. pickle meat in 1 inch chunks
1 large onion, quartered
1 cup chopped bell pepper
3 large cloves garlic, minced
1/4 tsp. Zatarain's Cayenne Pepper
1/4 tsp. ground black pepper


Allow beans to soak overnight in water. Remove any that float, and then pour off excess water, leaving enough to cover beans.
Add meat, peppers, onion and garlic and simmer until beans are tender, approx. 1 1/2 to 2 hours.

Serve over Zatarain's Extra Long Grain Parboiled Rice.

hmmm, you might check around some new orleans recipes, as 'red beans and rice' are a staple of that city. and, if they have a meat in them, omit it. (but i don't think they do)

i have recipes for this at home, but not w/me here. (i think red beans are the same as kidney beans...ooops , not sure.) anyway, they could always be used the same way.
