hi all
can anyone tell me the ultimate way to prepare tamil kootu a thick gravvy sort

i love the kootu prepared by my mom. Just boil daal (mogur or toor) daal along with sabji of your choice (beans or chou chou or carrot or pumpkin) along with the daal in the cooker along with kootu powder. This is a special powder prepared by my mom. I don' t know its recipe but when I the ones I bring from home get over I just add little bit of 1 /2 tablespoon of sambar powder instead. The taste remains the same. Heat ghee/oil add hing, mustard seeds, urid daal, red chillies and curry leaves. Add the daal andsabji mixture. Add water as per your convenience. If kooty is very thin just take little bit of rice powder or besan powder with water and add it. It will become thick. alternatively instead of using powder you can grind the masalas and add it to the kootu. I think cocunut, red chillies, dhaniya seeds, urid daal etc are fried. Then ground. This is added to the kootu which makes it thick as well. Good luck.

if u want to prepare chow chow kootu, take 2 or 3 of them, scrape it, cut it into pieces and boil it along with little bengal gram for taste with little turmeric and salt. then drain the water and keep it aside. do not throw away the water as it contains all the nutrition then grind coconut, jeera, dry chillies into a paste. add this paste to the boiled vegetable along with some boiled toor daal. if the mixture is too thick, add some of the drained vegetable water. let this mixture boil for about 5-6 minutes of till raw smell goes. then season mustard, hing, curry leaves and 1 red chillie.

1 1/2 c. cooked chicken, chopped
1 hard-cooked egg, finely chopped
1 tbsp. finely chopped onion
2 tbsp. finely chopped stuffed olives
2 tbsp. finely chopped celery
1 tbsp. pickle relish
1/8 tsp. salt
Dash of pepper
1/4 c. mayonnaise or salad dressing (sm. amt. mustard if desired)

Combine all ingredients in a bowl. Mix well. Spread between buttered slices of your favorite bread. Wrap and pack for lunches. Makes 6 sandwiches.
