Vegetarian Food:veg receipes without using coconut

Hai,
i have to cook for my son, who has to take food without using coconut as per our doctor' s instruction. I need variety of receipes to impress my husband and my son.

why dont u make food in punjabi masala as we dont use coconut in our food,
chopped couple of onion and 3 to 4 cloves of garlic fry them in oil till golden brown n then add salt, turmeric,red chilli powder,garam masala (optional) chopped green chilli and some fresh corriender once all mixed up add 4 chopped tomatoes n cook till everything is well mixed n oil start leaving the masala, one this is done then u can add any vege, or non veg, or kidney beans, chickpeas/black channa, black eye bean etc etc.need to add water (boiled) to make curry. hope this is any help.
