hi,

If you have guests comin then u can prepare brinjal masala(Bagara baingan)
brinjals-10
Palli or groundnuts-1/4 kg
sesame seeds -100g
green chilli -12
Cloves of garlic-3
Jeera-25g

Soak 125gms of tamarind in water for 15 mins. Roast all the above ingridients. Make a paste of the ingridients using tamarind water.
In a seperate pan heat oil. Add the spices(caraway seeds, cardamom, elachi, cloves, tej pata). Add 3 medium sized onions. Fry the onions till they turn brown. Now cut the brinjal into four semi halves.Fill the groundnutpaste in brinjals. Now add the brinjals in the pan. Turn them slowly till they get half cooked. Now add the remaining paste in the pan. Add 1 cup of tamarind juice.Let them boil for 20 min. A layer of oil forms above the gravy. Oil oozes out. Turn off the stove. Serve with fried rice.
