In my country, Ireland, my people eat LOTS and LOTS of potatoes everyday, at most mealtimes. At home, my family eat varieties of potatoes, such as Kerr Pinks, Red Roosters, etc. Most Irish use potatoes to make boxty, potato cakes (absolutely delicious), wedges, chips (same as French fries), pan-fried potatoes (delicious), etc. If you have leftover of boiled potatoes, you use the mashed vegetables to make your potato cakes and pan-fry unmashed vegetable in butter (ghee). This might surprise to some of you Indians to know this, most Irish eat their French fries topped with INDIAN CURRY SAUCE. It is the same in Britain and elsewhere in the world.

I thought that Smita' s recipe for French Fries, the McDonald-style is a little too laborious for some readers, especially those with less time on hand. In most homes in the West, chips(also French fries) are made differently.

To make chips or french fries, firstly wash and scrub the potatoes (irish call them spuds). Optionally, peel the skin off the potatoes or leave the skin on, depending on varieties of potatoes. That' s up to you. If you want the skin on chips, buy the New Potatoe variety.
Once washed, chop the potatoes into long strips, about the thickness of your fingers. Dry the chips on tea-towel. Most importantly, make sure that the oil in the deep pan is boiling or nearly boiling ( and bubbling a bit), but be careful as not to let your pan catch fire (if caught fire, use the cloth to smother out fire or flames. Don' t use water to extinguish fire. Cloth is better). Oil must be really HOT, HOT, HOT before you throw in the chipped potatoes - otherwise, your chips come out soggy and greasy. If your oil is sufficiently HOT, your chips come out crispy on surface and flowery on the inside. Add salt and vinegar to your chips or French fries and enjoy. Alternatively, uses sauces, whatever you like. Some like their chips with coleslaw or grated cheddar cheese. I like mine with salt-like herbs.

Kevin, thanks for reminding me. I have left something out in my previous post. Which oil to use for frying chips.

In Ireland, the oil most commonly used to deep-fry chipped potatoes is the sunflower oil. Every Irish home uses this oil for making French fries.

Kevin,
You asked if potato flour can be used to make pancakes. I don´ t know about that.
If you mean POTATO CAKES, not pancakes, you just use boiled potatoes, mixing them with a little wheat flour and a pinch of salt. When you have that done, roll the mixture out onto the floured surface. Roll it out to a thickness of between 5 mm and 10 mm, whatever thickness you desire. Then cut into triangles or squares. On a frying pan, add a little butter or oil and fry your potato cakes. You just fry the potato cakes like pancakes. You can eat potato cakes with your baked beans, sausages, grilled tomatoes, mushrooms, etc.

If you ever have any leftovers of boiled potatoes, remember to save them for making potato cakes.

By the way, boxty is different from potato cakes. Boxty is made with grated raw potatoes which are mixed with wheat flour and a little salt, rolled out and cut like potato cakes. You fry boxties in much the same way as potato cakes. In truth, I am not at all fond of boxties, which are not starchy as potato cakes. I prefer potato cakes to any boxty.

good advice, rita.
yep, really hot oil. peanut oil is good to use, as it can take a high temperature w/o burning/scorching. olive oil, ghee, etc, are just out of the question, as they won´ t go as high. problem w/peanut oil is that it carries a higher price. corn (maize) oil and soybean oil are ok, but peanut or cottonseed oil go to that high temp w/o a prob.

hey, don´ t forget ketchup (kejap) for fries. originally from malaysia, but now about as american as the statue of liberty (which was really a gift from france). in germany they make and sell ´ curry ketchup´ in the supermarkets. it is ketchup w/curry powder mixed in. INCREDIBLE on fries. my mom used to mix ketchup and curry and molasses together and use as a topping on meatloaf as it was baking. o man, it didn´ t taste like ketchup or curry or molasses, it took on a new flavor and thick and maybe to the soft ball candy stage. yum
back to potatoes.
there are many different types of potatoes, and each has different qualities. some are very moist inside. these typically don´ t make the best french fries, to my taste at least. russets are usually good for baking, and usually one that is good for baking is also good for frying in deep fat. ones that are good for boiling are usually not as good for frying. ones that are good for mashing are usually not as good for frying, either.
rita, wow, love boxty. didn´ t know it was made w/potatoes. i´ ve only had it a couple times. is potato flour used for the pancake? it is very difficult to find in the usa.
o, a common thing in the usa to eat on top of fries is chili w/some grated cheddar cheese on top. this is not the chili pod, but a dish common to texas that is made from beans, sometimes meat, dried chili pods, other spices, tomatoes, etc. it can be mild or as hot as hot gets in spice. when mixed, it is called ´ chili fries´ . a caution, it can leave the chili taste in your mouth and throat all day and into the next, if it is done right!

I have a recipe for French Fries, turns out to be pretty crisp,, mcdonalds way..
1. cut potatos into long strips and keep in cold water wit salt in itfor 10 mins..
2. add turmeric and pressure cook the potatoes... now put water in the cooker, and keep the bowl of french fries in it (no water in the bowl, potatoes should be dry)
3. pressure cook it for 2 whistles and afer that, simmer the gas for 15-20 mins.. then off it..
4. remove and deep fry...
add salt if reqd... chek it out..

How difficult can it be? Cut the potatoes and fry them. Then put salt. Normal fench fries don' t have any masala in them.
