Vegetarian Food:how & what to freeze (Veg. food)

Hi

I am in USA and it takes me a lot of time in cooking fresh food daily. I have heard many people saying that they cook more and freeze for later, I have never tried this on my own.
Can somebody suggest me what all food/vegetables can I freeze and for how many days. what is the right way to use that item back. Would it have impact nutritional values of the food as I have a young kid (2yrs old). Do we need to add any preservatives ?

hi iam an indian mom,
v dont freeze much except for tomato puree and lemon cubes and peas.lemons u can squeeze out the juice of a dozen or more and pour these into ice cube trays.once frozen,take out the cubes and store in a container.and as for tomatoes,take a large qty of these and chop into medium pcs,put in a large cooking pan and reduce(that is until most of the water burns out).let cool and put in a blender to make a smooth puree.strain and store in small containers,freeze them and which u can use as and when u like .

are the ones that I use to freeze foods. You get them in various sizes in every store. I use frozen within a month or two and I don' t know if you can store them for more than that. I freeze all types of curries,gravies ,sambar,idly and such things except dosa and chapathi.
But once I thaw I dont put them back and use it immediately and I do not microwave in those containers. I use my separate microwave bowls. I don' t think they every have an impact on nutritional and are safe for kids. Moms here in the US ,freeze baby food in those freezer trays for later use.
