Vegetarian Food:pls help in preparing idlis.

Hi,
Whenever i prepare idlis some brown spots will come on the idlis and sometimes fully turns into brown colour. I wash urud dal very well and prepare idli mix, add salt and keep it overnight. While preparing idlis in the morning i add pinch of soda.
Can anyone tell where i make mistake and how can i avoid these brown spots.

try this ...
if its 1 cup rice than 1/4th cup urad dal...
soak both seperately for 8 hours atleast ...grind it ...mix it ....add salt n leave it overnight....soda is optional...
urad dal quantity should be 1/4 th of the rice....

Hi Neha,

I think the problem is with your utensil. Why dont you change ur Idli plates. Firstly, you pour the batter in a small plate or bowl and steam. See the difference. If you see the idli without any brown spot then you change your idli plate.

hi,
you try for 1 cup of urud add 2 cups of idly rawa and avoid to add soda.one more thing is keep the idly cooker in a medium flame and turn off the stove with in 5 minutes time.

what proportion of rice n urad dal do u add,also once try making it without adding soda,if it ferments well in the morning then dont add soda n then try.

Hi pooja,
Thanks for the reply. For 1 cup of urud I add almost 1-½ cup of ground rice. Once I tried without adding soda but still could see brown spots on one or two idlis. Other than that idlis will be very tasty.
