in answer to your 12/14 question abt which leavenings to use for cakes, typically cakes use double acting baking powder and egg whites to rise.
double acting means that bubbles form twice: the first from the contact with liquid. the second from contact with heat in the oven.
egg whites can be used for leavening all by itself for some things. popovers/yorkshire pudding does this (tho the whole egg may be used). angel food cake uses egg whites for leavening. i cannot remember offhand if baking powder is used, too. probably, tho.
yeasts are better for bread, in my opinion.
quick breads are usually w/baking powder or eggs or both....pancakes, waffles, muffins, biscuits(not cookies), etc.

if you have all purpose flour already, go ahead and use it for cake or bread. if you are thinking of buying it, well, you might want to buy cake flour instead. it makes a nicer cake. or bread flour if you are making bread. bread flour makes a nicer bread, too.
if you are thinking of buying self rising flour, well, do it as an experiment and see what you can do with it. you may like it, you may hate it. you might want to buy some buttermilk for it, as that will help to activate it (the leavening agents to produce air bubbles)

Thanks, that was wonderful info about flours. Actually I had gone to buy some good cake flour but then caught hold of this.
When I looked at cake recipes most of them have used either maida or self rising flour..i got confused and therefore wanted to know whether i can use the flour.If I use this for cake than what kind of leavening agents should i use? Will cake taste good as compare to other flours.
