I remember eating a veg Frankie in Bombay many years ago...For some strange reason I have a major urge to eat it again except that I don' t know how to make it....The recipes on the net just don' t sound right so maybe one of you mumbai mommies can come to my rescue and tell me how to make a veg frankie at home.

Take maide ka aata and knead a dough softer than that of chapati. U can also knead a dough with milk instead of water. Make round chapatis and half cook it and keep ready. For the stuffing, I make potato stuffing. Boil potato, smash it, add a lot of chopped onions, chopped green coriander to it. Add salt, green chille-ginger-garlic paste, dhaniya poweder, amchoor powder (very important for the sour taste of frankie) and sprinkle some whole jeera and choppen green chilles. U can also put vinegar (optional). Mix the mixture thoroughly with hands. Make small rolls and put between maida rotis (half cooked. Heat tawa with butter and shallow fry the frankies.
