I have always found that the chicken available in restaurents especially in chinese recipes is very soft and tender while if I get the same thing made at home the chicken is not that soft infact it is a bit fibre-like.I ahve even tried buying boneless chicken but it is not like we get it from restaurents.Anyone knows why? why the difference in the texture of chicken.

just tenderise ur chicken half an hr before preparation by adding 1lemon or 1tbs vinegar & some salt

always buy chicken which are small in size i mean they must be young chicks i read somewere the wholechicken should weigh only 1kg
