Non-Vegetarian Food:Hey Shals (Haleem)

Haleem

Ingredients

- 1 cup whole wheat grain,
- 1 cup oats
- 1cup Channa dal ( split chick peas)
- 12 cup Masoor dal (split Egyptian lentils)
- 12 cup Moong dal (split moong beans)
- 12 cup Mash dal
- 1 12 kg. Boneless beef
- 6 cups water
- 1 cup oil
- 3 medium onions, skinned and finely chopped
- 2 garlic bulb, skinned and finely chopped
- 3 inch piece fresh ginger , peeled and finely chopped
- 1 level tsp. black cumin seeds
- 8 Cloves
- 2 tsp. Chilli powder
- 12 tsp. Ground turmeric
- 12 cup chopped fresh coriander leaves
- 1 tbsp. Chopped fresh mint leaves
- 2-3 tsp. Salt
- 12 cup natural yogurt
- 5 tbsp lemon juice

Washed and soaked all of the dals and grains overnight. Drain the wheat and place in a saucepan. Add 6 cups water and boil gently for about 45 minutes or more until very tender and mushy. Reserve the wheat. Drain the dals and place in a sauce pan with four cups of water. Boil for 30 minutes. Or until tender and mushy. Reserve the dals.
Heat the oil in a large heavy-based saucepan. Add the onion and stirring frequently, fry for about 10 minutes to a deep golden color. Lift out all the onions with a slotted spoon. Put three quarters of them in a blender or food
processor. Add the garlic and the ginger and blend to a smooth paste. Reheat the oil in the pan, add the ground onion mixture and continue frying for another few minutes. Then add the cumin seeds, cardamom, cloves, chilli powder, turmeric and the chopped coriander and mint. Stirring frequently, fry for 5 to 10 minutes to a rich golden color; the oil should start to separate. Add the beef and the salt. Stirring frequently, fry until the meat is well
browned and nearly tender, about 40 minutes. Add the yogurt and stirring continuously, fry the beef for another 15 minutes until it is tender and the yogurt is well blended. Add the remaining 300ml water, stir well and simmer for another 10 minutes. Remove the pieces of beef and chop into small pieces. \";Ghota\";. In fact the right way of blending beef with lentils is that all are crushed and mixed together using round wooden spoon.
Add the boiled wheat and the strained lemon juice. Stir well \";Ghota\"; to mix the ingredients. Reheat but do not allow to boil; serve at once, garnished with the reserved onion mixture.

You can serve Roast chicken with Rice,Raita,Vegetables,and naan or Roti

1. Green Pulao

Ingredients


-1 cup Basmati rice
-1 medium onion, chopped
-12oz package frozen peas
-4 cloves
-1 small stick cinnamon
-1 clove garlic(minced): optional
-2 to 3 bay leaves
-2 tbsp oil (more if you like)
This is an easy way to make rice more exciting. Typically, Basmati rice would be the best, the aroma is unbeatable, but use whatever white rice is available.
Heat oil in a deep pan and fry onions till slightly brown. Add cloves, cinnamon, bay leaves and garlic and stir. Add rice and stir for 2 to 3 mins. The rice should be coated with the oil. Add 2 cups water and allow thw pot to come to a boil.
Add peas.Stir, lower heat and simmer covered until the rice is cooked. Let it stand uncovered until extra water evaporates. Serve with Raita.


2. Raita

Ingredients

-250g yogurt
- 1/4 cup fresh milk
-1 cucmber, peeled fine chopped
-1 tomato, fine diced
-1/4 bell pepper,cut in thin stripes
-1/4 ts ground black pepper
-salt to taste
-1/4 ts Zeera
- few fresh mint leaves roughly chopped.
- 1 hot green chilli fine chopped.
Nothing easier than preparing this excellent Raita. Pour milk into yogurt and stir with spoon to make thick creamy paste. Now add all other ingredients and yummy Raita is ready. Serve with grilled meats or why not to try simply with oven hot Nan.


3. Tandoori Naan

Ingredients

-6cups Maida (white flour)
-6tsp Milk powder
-1cup Evaporated milk
-6-7tsp Sugar
-200gm. Oil (You can also use margarine)
-2tsp Baking powder
-3tsp Yeast
-1 Egg





1. Mix all the ingredients until it is fine dough.

2. Cover with a wet cloth and let it sit at room temperature for 3 hours.

3. Then divide it evenly into 12 parts.

4. Roll out into flat round shape and make sure it is as thick as a pizza's
crust.

5. Bake in oven at 350' and take it out when it is light brownish color.

You can buy whole wheat flour from indian store.
I live in USA. I also buy from Pakistani Store.

will i get whole wheat in USA do i get it from the indian store or we have an eastindian store here too but they have whole wheat with the skin as well as without the skin which one do i use

thanks a lot for all the recipies i think im lucky to get so many recipies can i use chicken or goat instead of beef since i dont eat beef would it taste equally good
