hey thanks kevin for the wonderful recipies ....the first one sound like the ones i eat im CARABBA Chattanooga TN, is the Phillips seasoning available in local groceries stores ....secondly would you have the recipe for crab ragoon (the sweet pasty ones)

hmmm, i have had lobster rolls in maine and massachussetts. are they the same? not sure. in new england it is cooked & cooled lobster meat mixed with mayonnaise and celery and maybe a few other items. then it is put into a hot dog bun and served for a light lunch. they are awesome.

is this the same as what they do at red lobster? or do they make a wrap or a sushi roll or egg roll with it?

i DO love lobster burritos (available at rubios in california) the way i like them is a flour tortilla, a bit of white rice, some avocado or a bit of guacamole, lobster chunks, cooked and cooled, a little bit of a white mild cheese, a little fresh salsa (chopped onions and tomatoes). wrapped up in the tortilla, then a lime to squeeze on each bite as you are eating it. yum. some like beans in it...i don't like the mix w/the lobster.

ok, now i am officially hungry!

hi shals. hmmm, not sure if it is available in the stores there, but it might be. they do have an internet site...i just found it.. www dot phillipsfoods dot com. they show which stores in which states carry their products and you can also order stuff from them. took me a while to find the seasoned salt. had to click on 'category' then on 'seasonings'.

the 'old bay' brand may be easier to find in the stores in tn. both are from maryland, but old bay has a huge following. i like them both. years ago i sent a can of old bay to friends in mumbai. they enjoy it and use it like a salted masala.

hmmm, don't know crab rangoon, but i think i have heard of it. sounds good.

my favorite crab dip is very simple and very good. 3 major components... crab, cream cheese, horseradish. mix them together and heat in the oven until bubbly. you can also add things to it...such as a bit of onion, green/red bell pepper, seasoned salt, finely chopped celery, etc. or, anything that you think might go well with crab. you serve it hot with crackers, bread, vegetables, etc.

o yes, i do. love them crab cakes. i have at least 10 different recipes for them.

here are a couple:
from phillips' restaurant and seasoned salt in baltimore, maryland:

begin by buying the freshest 1 lb lump crab meat available, and then handle the mixing ever so gently in order not to break up the lumps. beat 1 egg, 1 tsp worcestershire sauce, 1 tsp lemon juice, 1 tsp Phillips seasoning (a masala type salt of celery salt, pepper, mustard, pimento, cloves, laurel leaves, mace, cardamom, ginger, cassia, and paprika), 1 tso dehydrated parsley flakes, 1/4 tsp dry mustard, 1 heaping tbsp mayonnaise, 1 heaping tsp salad mustard (dijon, etc). break 2 slices of bread into small pieces and along with the crab meat, gently fold into the egg-spice mixture. shpae into slightly flattened patties and chill. fry or broil until golden brown on each side and serve. yields approx 6 3 1/4 oz. crab cakes.

old bay's recipe:
2 slices bread, crusts removed
1 tbsp mayonnaise
1 tbsp worcestershire sauce
1 tbsp parsley flakes
1 tbsp baking powder
1 tsp old bay seasoning (again, a masala salt of celery salt, mastard, red pepper, black pepper, bay laurel leaves, cloves, allspice, ginger, mace, cardamom, cinnamon, and paprika)
1/4 tsp salt
1 egg, beaten
1 lb crab meat
break bread into small pieces and moisten with milk. add remaining ingredients. shape into cakes. fry or broil until golden brown.

if you chill them for a half hour to an hour before cooking they will hold together better.

some add finely chopped celery or onion or green/red bell pepper, etc. some use crackers (crushed) instead of bread. some use no bread or crackers, etc. some omit mayonnaise, as the egg will bind all together. some separate the egg white and yolk before adding. hope these 2 recipes give you a good start. o, also, some stuff it back into the shell and bake. this is called 'deviled crab'.
