Sweets and Desserts:carrot halwa

carrot grated-1 cup (or beetroot)
sugar - 1 cup
milk - 2 cups
ghee - 4 tsp
cashews n raisins-few

preparation
1)add 1 tsp of ghee in a wide pan ..heat it up..when the ghee starts melting add the grated carrot n saute it for 2 min

2)add milk n stir it occasionally untill it thickens with carrot(shud not stick to the bottom or sides)

3)when the milk condenses n thickesn with carot add sugar n mix.stirr it ...the sugar will melt first and then it starts leaving the sides n the sides looks like strings while strirring.add roasted chasews n raisins n stir for another 1 min.

4)when the sugar starts leaving the sides add the remaining 3 tso of ghee n stir again again the whole mixture leaves the sides n ghee gets completely absorbed with the carrot mix.switch off the flame

5)serve hot or chilled with soem almonds/pistachios or saffrons..it thicksn n sets well if itz chilled..so make it set in a cool desighned bowl.
