hi girls... since we' re sharing nutritious recipes.. i' ll add one i recently discovered... it' s a play on good old vegetable noodle soup... but since until now i made soup strictly with soup cubes... which contain MSG/ajinomoto... i had to try and come up with one that tasted good without the stock cube... so i experimented... and believe me it was sooo delicious.. i ate it for 2 days in a row...
well i can put in exact measurements.. because i pretty much threw in things... but i' ll try what i remember :-)
note: the dry herbs and spices that i used were an effort to find the right taste.. you can experiment on your own and play around with ingredients if you want.. because you may not find parsley and basil easily in india... but we have better spices in india...
mixed veg-noodle soup
Ingredients:
1 spring onion
1 carrot
5-6 button mushrooms
half a cup corn kernels(if fresh.. preboil them.. i use the canned variety)
1/2 a capsicum( bell pepper)
1 or 2 green chillies
1 tomato ( you can use more.. it only adds to the flavour)
1/2 a cup tomato puree (you can use extra tomatoes instead)
1 tsp corn flour
1 tsp soya sauce
1/2 tsp vinegar ( or lemon juice should do)
1/2 tsp chilly flakes
1/2 tsp parsley flakes ( fresh or dry will do)
1/2 tsp basil flakes ( fresh or dry)
1/2 tsp black pepper powder
salt and sugar to taste..
1/2 a tsp rasam powder (that was the last ditch at taste... and guess what! it worked!!!)
method:
put all veggies in a deep vessel... with lots of water... and boil till tender, add tomato puree and spices and everything else with salt and sugar... and boil some more.. then add the noodles and let them soften in the soup... ( you can do the first part of boiling in the pressure cooker)
last of all.. when you' re satisfied with the taste.. add the cornflour diluted in some water.
i like to add some milk to the soup at this stage.. you can also add cream... or nothing at all...
( you can also add cabbage, peas, beans, or anything you have at home into this soup)
you can eat this thing all day... it' s really great!!
