hi shalmali
here am posting a recipe for mutton boryani i can't say its simple but you need some effort to get the recipe well.
Mutton-1/2 kg
basmati rice- 1/2 kg
oil- 4 big tsp
ghee- 2to 3 tsp
gingergarlic paste-100gms
onions-2 to 3 medium sized sliced long
green chillies - 2 to 3
tomatoes- 4 to 5( people who does not like tomotoes can avoid using it)
corrainder-1 bunch chopped finely
pudina-1bunch chopped finely
dhaniya powder- 2tsp
jeera powder- 2 tsp
cinnamon- 3
cloves- 6 to 7
dalchini -2 inch
tejpatta
salt, mirchi powder accordingly
*You need to saok rice for half an hour before you start your biryani.(soaking rice before hand is the main thing to be done while preparing biryani)
step 1: cut & clean mutton to the required size . Mutton + 75gms of gingergarlic paste+ salt + mirchipowder( 1 or 2 tsp)+ powder of cinnamon cloves & dalchini .....let this marriante for 20 to 25 min and cook in a cooker for 4 to 5 whistles
step 2: take a bowl add ghee & oil let it heat add 2 to 3 cloves + tejpatta + cinnamon stick+ onions + green chillies+ remaining gingergarlic paste fry it for a while + corriander & pudina + tomatoes let the tomatoes get soften + dhaniya powder + jeera powder+ cooked mutton (step 1) let this fry for 2min add water ( for 1 glass of rice u need to take 1 1/2 glasses of water,i.e; 1:1 1/2)+salt,let the water boil then add rice ,too much of stirring is not required )cook until done and serve hot with mutton gravy & curd raitha.
