Baigan Bharta
Brinjal (big) - 1, Onion - 3,Tomatoes - 3, Corriander leaves
Boil the brinjal and peel the skin. Then smash it well. Heat oil in a kadai, add Jeera and finely chopped onions and fry till brown. Then add finely chopped tomatoes and fry till it blends well. (Finely chopped ginger can be added, it is optional). Then add the smashed brinjal and mix it well. Add turmeric powder, red chillie powder and mix well. When the oils leave the sides add salt and mix well. Garnish it with corriander leaves.
This is a simple and easy dish, if we want we can add green peas, capsicum (finely chopped). Garam masala is optional, corriander gives better flavour than garam masala poweder
