CURRY LEAVES THUGAYAL Recipe | Main Course Recipe by Sankari |
| INGREDIENTS | Fresh Curry Leaves - 1 cup
Urad Dhal - 2 tsp
Tamrind paste - 2 tsp
Dry chillies - 4
Oil - 1 tsp
Salt to taste
Asefotida - a pinch | METHOD | 1. In a frying pan, heat oil and fry the urad dhal till they turn golden in colour. Also fry dry chillies and curry leaves seperately. Do not fry the curry leaves too much.
2. Grind dal, red chilly, tamrind and salt in the mixer first and later add the curry leaves and asefotida. Grind them to a fine paste. Add little water in between.
3. Thugayal is a south Indian dish and it is a thick paste. It is usally mixed with cooked rice and gingley oil.
4. Very easy and good for health. It can be used as side dish for rasam - rice curd / yogurt - rice.
5. This type of thugayal can be made with fresh mint leaves and coriander leaves. |
