BITTER GOURD FRY WITH ONIONS Recipe | Main Course Recipe by Padma |
| INGREDIENTS | 250 grams bitter gourd (5 or 6 medium size ones)
3 or 4 medium size onions
1 medium size potato (optional)
2 or 3 tbsp cooking oil
¾ tsp chili powder
¼ tsp cumin seeds or powder
Salt to taste | METHOD | 1. Slit bitter gourds lengthwise into two and cut them into thin slices. (Marinate these pieces in ½ tea spoon salt for 5 to 10 minutes and squeeze out the juice. It no doubt reduces the bitterness but in the process the vegetable loses some of its medicinal values too).
2. Cut onions into medium size pieces. Scrape the skin off the potato (optional) and cut it into medium size pieces. Heat oil in a pan with a thick bottom or a wok.
3. Fry the bitter gourd pieces for about 5 minutes on a medium flame. Then add the onion and potato pieces along with salt and mix well. Fry them on low flame till golden brown.
4. Add chili powder and cumin powder and fry for another 5 minutes. (For best results, cook on a low flame as far as possible and keep it covered, in between frying as it yields water).
5. Bitter gourd should be deeply fried unlike other vegetables. It goes well with hot rice and clarified butter. |
