MASALEDAR PARATHE Recipe | | Main Course Recipe by Tarla Dalal |
| | INGREDIENTS | For the dough
2 teacups plain flour (maida)
2 teaspoons melted butter
3/4 teacup milk
1/2 teaspoon salt
Milk for making dough
Melted ghee for cooking
For the stuffing
2 teacups mixed boiled vegetables (french beans, carrots, green peas)
1 onion, chopped
1 potato, boiled
2 green chillies, chopped
1/2 teaspoon chilli powder
2 pinches garam masala
2 tablespoons chopped coriander
2 tablespoons ghee
Salt to taste
| | METHOD | For the dough
Sieve the flour with the salt. Mix all the ingredients and make a soft dough.
Divide the dough into 8 to 10 portions.
For the stuffing
Heat the ghee and fry the onion for 1 minute.
Add the remaining ingredients and cook for a few minutes. Add a little water if the mixture is dry.
Cool the mixture.
How to proceed
Roll each dough portion into a big thin round. Cook on a tawa (griddle) on both sides for a few seconds.
Put some stuffing in the centre and fold like an envelope.
Cook on a tawa (griddle) on both sides using ghee.
Serve hot with chilled curds.
