HARE MATTAR KI PURI Recipe | | Main Course Recipe by Tarla Dalal |
| | INGREDIENTS | For the dough:
500 grams plain flour (maida)
2 tablespoons fresh curds
1 level teaspoon baking powder
1 tablespoon ghee or margarine or butter
1 teaspoon salt
Other ingredients:
Ghee or refined oil for deep frying
To be mixed into a stuffing:
2 teacups boiled green peas
5 finely chopped green chillies
1 teaspoon cumin seeds
1/2 teaspoon lemon juice
1 teaspoon plain flour (maida)
1 teaspoon ghee
Salt to taste
| | METHOD | For the Dough:
Sieve the flour very well.
Add the curds, baking powder, ghee and salt and make a soft dough by adding some more warm water.
Knead the dough for at least 6 to 7 minutes.
Keep the dough under a wet cloth for at least 1 hour.
Knead for 1 minute.
Divide the dough into 20 balls and flatten a little.
For the Stuffing:
Mash the green peas and add the green chillies.
Heat the ghee, add the cumin seeds and fry until they crackle.
Add the mashed green peas, chilles, lemon juice and salt and cook for a few minutes.
Sprinkle the flour and cook for 2 to 3 minutes until the mixture becomes dry.
How to proceed:
Roll out each ball dough into a small round. Put a teaspoon of the stuffing in the centre and close it.
Roll out thinly with the help of a little flour.
Deep fry in ghee.
Serve hot.
