 |  |   INGREDIENTS |  350gm minced mutton
 finely grated rind of 1 small lemon
 1tbsp lemon juice
 1 garlic clove, crushed
 1tsp ground cumin
 1\2 tsp salt
 1\2 tsp freshly ground pepper
 1 small onion, skinned
 oil for grilling
 lemon wedges, to serve
  |  |   METHOD |  | 1# put the minced meat in a bowl with the lemon rind & juice, garlic, cumin, salt & pepper. Mix well together, by hand. 2# grate the onion & mix again. Cover the bowl & chill in the refrigerator, preferable overnight. 3# divide the mixture into 12 pieces & form into small balls & press them gently. Chill again if possible, then lay it on oiled baking tray. 4# Brush them with oil & grill evenly for 10-12 minutes, turning frequently until browned.
