TOMATO RICE SOUP INGREDIENTS: 500 gms. fresh tomatoes – chopped.
METHOD: Put the tomatoes, water, salt and
pepper in a saucepan with a lid. Bring this to a boil, stirring continuously.
Cover the saucepan. Lower the heat and simmer for about 30 minutes.
Let this mixture cool. Next take this mixture and puree in a mixer. Pass
this through a sieve to remove the peel and seeds. Now put this sieved
puree in a clean saucepan and bring to a boil. Put the rice in this and
stir. Lower the heat and cover the saucepan. Simmer for about 15 minutes
or until the rice is tender. Serve piping hot garnished with parsley.
